It's been a while since I've posted a recipe on the blog and I was looking at some old Instagram posts and came across some baking I did back in NZ's lockdown (a long time ago, isn't it crazy how the pandemic changed our concept of time so much?). Ingredients/What You Will Need
Baking Tray/Cake Tray - I just used a square one that is 22.5cm x 22.5cm x 5cm
For the crust/base
1 cup of butter (melted)
2 cups flour (sifted)
1/4 cup of sugar
1 tsp vanilla essence
For the topping
4 eggs
The juice of 4-5 lemons (or more depending on your personal preference)
1/4 cup flour (sifted)
1 cup sugar
1 tsp lemon essence
Method
Step 1: Preheat oven to 180 Degrees Celsius (350 F). Line your baking tray with baking paper.
Step 2: (For the crust/base) - mix all ingredients together, then pour into baking tray. Bake for 15-20 minutes. Let cool for 10 minutes (leave oven on).
Step 3: (For the topping) - mix all topping ingredients together, pour over base and then bake again for another 20 minutes.
Step 4: Let cool then cut into squares and enjoy!

My brother took it upon himself to come help clean my home. I struggle to admit it, but I am a hoarder. My home was so messy that my brother ordered a dumpster rental and spent the entire weekend working. I am still at a loss of words for his charity. I made him a batch of these lemon bars as the smallest "thank you" for what he did for me. He mentioned that these were the best lemon bars he had ever tasted. He even said it in front of his wife, who was hurt by the comment until she tried them and grudgingly agreed with him.
