The Best Banana Bread Recipe EVER!

Hi friends! Are you like me and constantly have bananas going bad and you don't want to get rid of them so you do that thing where you chuck them in the freezer telling yourself you'll make banana bread and never get round to it? So your freezer is just full of old bananas. Well, have I got a solution for you! The best banana bread recipe ever (and it's SOOO easy).

Here's the best banana bread recipe you'll ever need!



I only took phone pics (sorry about the quality, I always forget to use my camera for food photography haha). From left - all the ingredients combined, raw mixture, cooked banana bread.


Ingredients


  • 2 - 3 frozen over-ripe bananas

  • 1 can of condensed milk (usually about 395grams)

  • 75 grams of melted butter

  • 1 egg

  • 1.2 cups of plain flour (300grams)

  • 1 tsp of baking powder

  • 1 tsp of baking soda (also called bicarb in Australia)

  • 1 tsp vanilla essence

  • Pinch of salt

  • 1 tsp cinnamon (optional)

  • 1 cup of chocolate chips (optional)

  • A loaf pan/baking paper/tin foil





Method


Step 1: Preheat your oven to 180 degrees Celsius OR 160 for fan-forced. I did 180 for my oven.


Step 2: Line your baking tray (loaf pan) with tin foil AND baking paper (trust me, it helps flavour if you use both).


Step 3: Peel your bananas and mash them with a fork in a big baking bowl. Pro tip - leave out on the bench before use OR quickly heat them up in the microwave for easy peeling. You can also use a stand mixer if you have one. I swear by my KitchenAid stand mixer, check "this one out".


Step 4: Place condensed milk, butter, egg, vanilla, and a pinch of salt in with the mashed bananas. Mix to combine.


Step 5: Sift in plain flour, baking soda, and baking powder. Mix together.


Step 6: Add in desired optional ingredients such as chocolate chips and cinnamon. You could also try an allspice too. Be careful not to overmix banana bread (undermixed is better).


Step 7: Once combined, add your mixture to your baking tray and place in the oven for 60 - 80 minutes OR until a skewer comes out clean.


Step 8: Remove from oven and let cool on a wire rack.


Step 9. Enjoy with a spread of butter, Nutella, Biscoff spread, or some chocolate on top. You could also have it with a scoop of vanilla ice cream.
