The Best Rocky Road Recipe You'll Ever Need!

Hello friends! Are you an avid Rocky Road fan like myself? Well, let me tell you, you've come to the right place. I've made SOOO many different versions of Rocky Road in my life BUT by far, this recipe was my favourite by a long shot. Let me know in the comments if you make it! Makes about 24 - 30 pieces depending on the size of the baking tray you use. I used milk chocolate here but you can use white OR dark, just look up the melting instructions - and if you want to make it vego friendly, swap out marshmallows and lollies for vegan ones (i.e., ones without gelatin in them).





Ingredients


  • 400 grams milk chocolate melts (or 2 x 250gram packets)

  • A bag of mini marshmallows (I used the leftover colourful ones in my pantry + some extra pink ones)

  • 1/2 cup glace cherries

  • 1/2 cup almonds (the sliced ones)

  • 1/2 cup raspberry lollies


Method


Step 1: Start by lining a square baking tray with aluminum foil and baking paper. Put to the side. Grab a pot and a heatproof bowl. Simmer the bowl over the water until just boiling. Once boiling, turn down and add the chocolate into the bowl - be very careful and continually stir here until the chocolate is fully melted.


Step 2: Prep all your ingredients and chuck into a separate heat-proof bowl (you don't even have to cut anything up, so easy).


Step 3: Pour your melted chocolate over the ingredients and then mix altogether. Once combined, pop into your baking tray and into the fridge to set (about two hours).


Step 4: Take out your Rocky Road about 15 minutes prior to when you want to cut it, then cut into rustic slices and enjoy! How good :D
